Christmas at home is always a delight but I may have indulged a bit too much. It's time to get back on track. This year I have a quick trip to Colombia then back to Asia for the winter. I am hoping to settle down somewhere with a kitchen and cook more than eat out. Thankfully around the world I've had delicious food and so much of it is nutritious and delicious. If you're tired of overeating but still want tasty food check this out: Pineapple Carrot MuffinsThis is an old school recipe similar to my Old Fashioned Banana Bread recipe that uses fruit as the sweetener. They are easy to make and a great breakfast on the go. I often skip the butter and instead use peanut butter. Butternut Squash LasagnaI first found this recipe over 10 years ago on KCRW's podcast and it's such a great twist. Everyone I make this for raves about it and most admit they didn't think they liked squash. It does have a lot of cheese but I think the Vitamin A offsets it...at least in my world. Brazilian Shrimp SoupMoqueca is seafood soup/stew/chowder traditionally slow cooked in a terra cotta dish. But the best one is from Bahia, where you can see the influence of Afro-Brazilian cooks as it uses what is known as “the trinity” of palm oil, coconut milk and malagueta chile peppers. This dish is SO easy to make, and while I like to follow traditional recipes I did swap out the palm oil as it's not health for the heart or the environment. 5 Minute Hawaiian PokePoke is one of those dishes people love to eat but never think to make it at home. I ate it everywhere in Maui from gas stations to fine dining and could not get enough. I was able to get the recipe from the famous Roy's restaurant and was shocked at how easy it is to make. French RatatouilleWinter can be a sad time for salads, the lettuce is limp or even worse costs twice as much as summer. This is an easy and tasty way to get your veggies in and is fantastic on toasted bread. Mayan Sikil PakNo recipe round up is complete without something from Mexico but you may not have heard about this pumpkin seed dip. Admittedly it isn't the most attractive looking but it is delicious and another very simple recipe. This version above is rustic but I've seen it all over Merida in bars served as a puree. Brazilian Vegetarian FeijoadaBrazil's national dish is a black bean stew is traditionally served with beef and pork. And while many people think a vegan version is an abomination, it is really about the beans. If you're looking to keep the protein but eat a little less meat this is very tasty. Filipino KinilawIf you love ceviche you must try kinilaw. This is a traditional recipe, but I have also provided some easy substitutions if you can't source all the ingredients like coconut vinegar. Persian Eggplant DipWhen I lived in Toronto I learned to love eggplant and borani bademjan was one of the dishes that shocked me. It's healthy, it's easy to make and it's full of flavor. Greek Tzatziki RecipeAnother old recipe where I learned I could make a tzatziki like dip with Greek yogurt that was better than the junk in supermarkets. This was long before the protein trend hit diets but yes it's also high in protein. If you like this you may also enjoy its cousin Turkish cacik.
